INNOVATIVE WINE STYLES - Brown Brothers

Cooking with Canberra region produce

The Canberra Region is home to some great local produce and in this session Tom Moore, Executive Chef of Grazing Restaurant in Gundaroo will showcase the culinary delights available in the region. Tom is passionate about the quality of produce in the local region with many of the ingredients on his menu at Grazing coming from his own garden at the restaurant!

Tom's culinary success began early. At age 19 he won Australian Apprentice Chef of the Year before travelling around Europe and North America, working in 5 star hotels and top restaurants.

Tom MooreHe was then offered the position of executive chef at the tender age of 22 in a 450 seat seafood restaurant in Victoria, Canada, where he stayed for over two years.

Thomas met his wife, Crystal, in the hospitality industry in Canada and then moved back to Australia with her to soon begin their own restaurant in Canberra, Sage.

Sage was to be the spring board for Thomas' career, winning numerous accolades including a prestigious "Chef's Hat" by the Sydney Morning Herald. Thomas is constantly contributing articles and recipes to the local newspaper, the Canberra Times, where his restaurant was named in the top ten of Canberra restaurants by the critics.

At 33 Tom Moore is one of Canberra's best known chefs, with a string of awards behind him and revelling in his current role as executive chef at Grazing, in Gundaroo, New South Wales, a short drive from Canberra.

The restaurant was named Australia's best tourism restaurant in the Qantas Australian Tourism Awards, recognition of its location in a classic 1865 pub, its sophisticated country ambience and its single-minded focus. www.grazing.com.au.

 

EXPERIENING AUSSIE SPARKLINGS' – Ed Carr, Constellation Wines Australia

This is a great opportunity to participate in an informative session with a true talent of the Australian wine making industry. Learn and experience some of Australia's fantastic sparkling wines, directly from the master.

Ed CarrEd Carr is Australia's most awarded sparkling winemaker who has long held the belief that Australia can produce sparkling wines equal to the world's best.

Ed began his career in 1977 with the Wynn Wine Growers Group as a Microbiologist, based at the Glenloth winery in Reynella. He was appointed Assistant Winemaker in 1984. In
1986, Ed relocated to Nuriootpa and was appointed the Seaview Sparkling winemaker, managing the on-site Traditional Method Cellars.

Ed remained in the Barossa Valley until his move to Constellation Wines Australia in 1994, where he continues as Group Sparkling Winemaker.

When joining Constellation Wines Australia (CWAU) in 1994,
Ed's brief was to establish the company as Australia's leading sparkling wine producer with a portfolio of products that covered all market segments from the best expression of cold climate sparkling to affordable commercial styles.

This gave Ed the opportunity to create his own "house" style across a broad range of diverse regional and branded products. In the fifteen years since joining, Ed's results are showing his foresight and talent with sparkling wine.

Over the past few years in Australian capital city wine shows, Ed's wines have won an unprecedented 21 consecutive "Best Sparkling Wine of Show" trophies.

The sparkling team now oversees a portfolio of sparkling wines at Constellation Wines Australia from the bargain bubbly "Omni", through to the prestige cuvée, "Arras".

It was Ed's foresight and firm belief in the potential of Tasmania as Australia's best sparkling fruit resource that was the driving force behind the company's vineyard investments.

In 1995, Ed laid the foundation for the first Tasmanian prestige cuvée "Arras" and December 2002 marked the release of the 1998 Arras – the first vintage made from 100% Tasmanian fruit.

Under Ed's guidance, vineyard investments have continued across Tasmania, and in 2001 Constellation Wines Australia established the Bay of Fires winery for the production of premium cold climate sparkling and table wines.

Ed firmly believes that the stand-out Australian regions for premium sparkling are Tasmania and the Upper Yarra Valley - and the premium end of the Australian industry has the potential to rival many non-vintage, and some vintage Champagnes.

 

CRAFT BEER BREWING – Matilda Bay Brewing Company

Matilda Bay was Australia's first modern craft brewery, opening in Fremantle, Western Australia in 1984.

Over the next 25 years, the Matilda Bay Brewing team scour the world tasting some of the world's best beer styles before returning home to create their own interpretation.

Matilda Bay Brewers are constantly looking for the next brew to satisfy beer enthusiasts across the country and this spirit ensures ‘The Garage' Brewery in Dandenong is always a hive of activity and the result is a diverse range of award winning beers with a devoted following.

The launch of Fat Yak in late 2008 was a huge success and has set a high benchmark for the launch of a new beer "Big Helga" in October this year.
